Ingredients:
3 Egg Yolks
1/2 Cup Powdered Sugar
1/3 Cup Lemon Juice
2 Tsp Lemon Zest
4 Tbsp Butter
Mix all ingredients in a glass bowl with a whisk. Place bowl on top of a pot of gently boiling water and whisk until mixture gets thick about 5 minutes. Take off the heat and stir in butter.
When butter is incorporated, place in a bowl to cool with plastic wrap down onto the curd so a film does not appear. Place in the fridge to chill.
