Turkey Sliders On a Pretzel Bun With Sweet Potato Fries

For the Sweet Potato Fries: Pre heat the Oven to 375 Degrees…

I used small sweet potatoes, they were about the size of fingerling potatoes…I cut about 8-10 of them length-wise in half so they were thin. I drizzled them with a few tablespoons of olive oil and a pinch of cinnamon, salt & pepper. Put them in the oven for about 30-45 minutes depending on the crispiness you like. When done they will be slightly sweet from the cinnamon and crispy! They are so yummy!

For the Sliders:

1 Pound of Lean Ground Turkey

1 Large Garlic Clove Chopped Finely

1/2 Cup Fresh Spinach Chopped

1/4 Tsp Paprika

Pinch of Cumin, Salt and Pepper

1 Tbsp Olive oil

4 Slices of Low Sodium Bacon (Cut into 1 inch pieces)

Extra Spinach Leaves (Whole)

1/2 Cup of Mozzarella Cheese

8 Pretzel Buns Cut in Half (I found these at Costco and they are so delicious)

In a small saucepan, add the bacon and cook until browned. Drain on a paper towel covered plate and set aside. This can be done ahead of time and you can store it in the fridge, or you can use left over bacon from the morning time. Its a great way to use up left over bacon so it doesn’t go to waste.

Mix all the above in a bowl with a fork gently. Form Small patties, enough to fit on a small slider bun. You should get 8  patties out of the mixture.

In a large saucepan, heat olive oil over medium to medium high heat and drop the patties in. Brown on each side ensuring they cook all the way through. They cook pretty quickly because they are so small…bout 5-6 minutes is all they need. Once they are done I add the Tsp of mozzarella cheese and a few bacon slices on top and put the lid on so the cheese melts. About 20 seconds the cheese is melted and you can pile them on the buns.

To dress them up I use a few spinach leaves in each of them,  and some Bob’s Big Boy Blue Cheese Dressing. These sliders are flavorful and no one will miss the beef. My kids said they were the best “hamburgers” they ever had.

I hope you enjoy!
